Silken Tofu with Canned Stewed Pork

This is my childhood comfort food. It is an ultra-fast and easy comfort food to prepare. I always have some canned stewed pork in my pantry, and there is always a block of silken tofu in my fridge. So whenever I crave for a fast childhood dish, this is my go-to comfort food to whip out.
This is SO EASY LAH! The recipe shown here feeds 1 to 2, just double up accordingly if you are cooking for more.

Prep time: 5 minutes
Cooking time: 10 minutes
Serving: 1 to 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 1 tablespoon groundnut oil
  • 1 tablespoon minced garlic
  • 1/8 teaspoon white pepper
  • 1 tablespoon (15ml) water
  • 1 teaspoon corn flour
  • 1/4 teaspoon oyster sauce
  • 1/2 can (4 slices) canned stewed pork
  • 1 block silken tofu
Method:
  1. Wash the sand and dirt off the coriander. Pluck them to 1-inch lengths and soak in water. Set aside for later.
  2. Open the can of stewed pork. I'm using half of the pork and half of the gravy. You can use the whole can of pork if you like.
  3. Silken tofu:
    • Unmolding the tofu from the packaging box:
      • Remove the plastic seal and loosen the tofu from the sides of the packaging box
      • Flip the tofu box packaging over onto a plate
      • Snip the corners of the box packaging to create a layer of air pockets between the bottom of the box and the tofu
      • Lightly press and tap the box packaging slightly. The tofu should detach from the box and drop onto the plate underneath. 
      • Lift the box to reveal a nice block of silken tofu. This method works for me 90% of the time.
    • Cut the block of silken tofu into small cubes
  4. Heat up the groundnut oil over MEDIUM LOW heat. Add minced garlic and stir-fry until golden brown and aromatic.
  5. Add the canned stewed pork slices, white pepper, and oyster sauce. Stir to combine.
  6. Add the silken tofu cubes. Gently stir to combine. Simmer for 1 - 2 minutes over MEDIUM LOW heat.
  7. Add water to the corn flour to make a cornstarch slurry
  8. Add the cornstarch slurry to thicken the gravy. Stir gently to combine.
  9. Taste and flavor to your liking
  10. Add the coriander and stir to combine. Turn off the heat, and the dish is ready.
  11. Plate up and garnish with a sprig of coriander. Serve immediately.
