Easy 5 Ingredients Green Pea Peas Cookies for Chinese New Year
This recipe is easy to make and almost fail-proof for me. The results are almost always consistently up to standards. There are only 5 ingredients, and it's not a whole lot of trouble to put together. SO EASY LAH! I usually make a big batch every year for the family to munch on during CNY and to give away some as gifts. I always feel family and friends appreciate homemade gifts more than store-bought ones, even if it's something simple. The recipe shown here yields about 100 pieces of cookies (1 large jar or 2 small ones).

Ingredients:

  • 200g all-purpose flour

  • 200g ground roasted green pea powder (200g green pea powder)

  • 110g icing sugar

  • 150ml groundnut oil

  • 1 egg

Method:
  1. Sieve icing sugar and flour into a mixing bowl
  2. Add green pea powder and stir to combine the ingredients
  3. Add groundnut oil slowly and knead to just combine the ingredients. Do not over-knead or the cookies will turn out hard. The dough should be pliable and soft (Play-Doh consistency). 
  4. Dust hands and utensils with flour. Measure 1 teaspoon of dough and shape it into a sphere. Repeat until the dough is used up.
  5. Arrange the cookie spheres on a baking tray. Space them out evenly and do not overcrowd the baking tray.
  6. Whisk egg. Brush the surface of the cookie spheres with the beaten egg.
  7. Baking time:
    • OVEN (Preheated): 170°C; 15 minutes
    • PANASONIC CUBIE: Convection with preheating setting; 170°C; 15 minutes
Notes:
  • Do not overknead the dough, or the cookies will turn out hard
  • I like to paint 2 layers of beaten egg over the tops of my cookies for a deeper golden hue. And I like the cracked texture the egg wash creates after the cookies are baked. 
  • Some people will use either the egg yolk only or add in some yellow food coloring to enhance the color of the baked cookies.
  • You can shape the cookies any which way you like - roll it out and cut it into shapes with a cookie cutter or measure and roll it into spheres. And you can decorate it with cut wedges of nuts or sugar sprinkles if you like.
  • If green pea powder is not available in your area, you can always oven-roast your own green peas and grind them up to make a powder. It is a bit troublesome and not as fine as store-bought green pea powder, but some people like the coarseness for a bit more texture.
