Creamy Potato Salad with Egg, Celery, Onion and Green Apple

This is my favorite dish to prepare for a party, a potluck or a picnic. It appeals to both kids and adults. And it can be served warm, at room temperature, or cold. You can change the ingredients in this salad to tailor to your own taste. Eg. swap celery with Japanese cucumber slices and apple for carrot slices for a Japanese-style potato salad. Or you can add in some ham slices for additional protein, or sprinkle on some crispy bacon bits for some crunch. It requires a fair bit of work during preparation, but it is not a complicated recipe. SO EASY LAH! Well worth the trouble. The recipe shown here feeds five to six; just double up accordingly if you are cooking for more.

Prep time: 15 minutes
Cooking time: 30 minutes
Serving: 5 to 6 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 500g potato
  • 2 eggs
  • 1 onion
  • 1 green apple
  • 1 stick celery
  • 1 tablespoon table salt
  • 1/8 teaspoon white pepper
  • 1/4 teaspoon pink salt
  • 1/4 cup (30g) mayonnaise
  • 1/3 cup (75g) yogurt

Method:

  • Potatoes:
    • Peel the potatoes. Rinse and then cut the potatoes into 1cm cubes. 
    • Place the potato cubes in a pot and pour in 1000ml of water. Add in 1 tablespoon of table salt. 
    • Boil over MEDIUM LOW heat until the potato cubes are fork tender (about 20 - 25 minutes). Stir occasionally.
    • Pierce the potato cubes with a fork to check if they are fork tender. Continue cooking if the potatoes have not softened.
    • When the potato cubes have softened, remove and let them cool
  • Eggs:
    • Bring 1000ml of water to a boil and gently lower the eggs into the boiling water
    • Boil the eggs over MEDIUM LOW heat for 10 minutes. Stir occasionally.
    • After 10 minutes, remove the eggs and drop them into cold water
  • Celery:
    • Remove the tough, stringy fibers on the outer part of the celery stalk
    • Dice celery
  • Onion:
    • Peel and chop onion
  • Hard Boiled Eggs:
    • Peel and dice the eggs
  • Green Apple:
    • Dice apple
  • Combine all the chopped / diced ingredients in a large bowl:
    Potatoes, celery, egg, green apple, onion
  • Stir to mix all the ingredients together
  • Add in mayonnaise and yogurt. Stir to combine all the ingredients.
  • Add white pepper and stir to combine
  • Taste and flavor to your liking. I added only a little salt because the potatoes have been boiled in salted water. Stir again to combine all the ingredients together properly.
  • Ready to be served or chill it in the refrigerator for a few hours for a cold potato salad
  • Plate up and garnish with a sprig of coriander before serving
Notes:
  1. If it is too dry after combining the ingredients, add more yogurt or mayonnaise
  2. You can always substitute yogurt with sour cream or use only mayonnaise - it all depends on what is available in your fridge
  3. You can change the quantity of ingredients to suit your taste. Eg. less green apple if it is too sour for you, or swap the green apple for red apple for a sweeter taste and a pop of color.
