Soft Tofu Steamed with Minced Pork and Shrimps Prawns | BIG Bites MY (Panasonic Cubie)

Soft Tofu Steamed with Minced Pork and Shrimps Prawns Tofu and shrimps are some of my pantry staples. This is nutritious yet simple and fast to prepare. Dinner can be ready in less than half an hour. SO EASY LAH! The recipe shown here feeds 1 to 2, so double up accordingly if you are cooking for more. Serve this with rice and side dishes of stir-fried vegetables and soup, and this is a comforting, belly warming meal.

Prep time: 10 minutes
Cooking time: 12 minutes
Serving: 1 to 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 100g minced pork
  • 90g (6 pieces) shrimps
  • 1 teaspoon soy sauce
  • 1/2 teaspoon oyster sauce
  • 1/8 teaspoon white pepper
  • 1/2 teaspoon corn flour
  • Some coriander
  • 3 pieces soft tofu (or 1 block of silken tofu)
  • Some goji berries / wolfberries (Not in picture)

Method:

  1. Prawns:
    • Make a slit along the spine of the shrimp and remove the intestinal track for all the shrimps
    • Keep the tails intact for 3 shrimps. Season the whole shrimps with a little white pepper and soy sauce. The rest of the seasonings will be used for the minced pork mixture later. Stir to combine and set aside to marinate while the other ingredients are being prepped. 
    • Remove the tails for the remaining 3 shrimps. Dice and rough chop the peeled shrimps. Do not chop too finely, or it will disappear in the minced pork mixture later.
  2. Minced Pork Mixture:
    • Place the minced pork in a bowl and add the chopped shrimp flesh
    • Add the seasonings: soy sauce, oyster sauce, white pepper, corn flour
    • Stir to combine the ingredients. Stir in one direction until the mixture becomes sticky.
  3. Make a hole in the center of the tofu with a spoon
  4. Add the tofu from the hole into the minced pork mixture. Stir to combine the tofu with the minced pork mixture.
  5. To stuff the tofu, scoop about 1 tablespoon of the minced pork mixture into the hole
  6. Make meatballs with the remaining minced pork mixture
  7. Arrange the stuffed tofu and meatballs on a plate
  8. Cooking time:
    • Panasonic Cubie (Total steaming time: 10 minutes + 4 minutes):
      • Steam setting, LOW, 10 minutes
      • After 10 minutes, decorate the meatballs with some rehydrated goji berries / wolfberries
      • Place the marinated shrimps on top of the stuffed tofu
      • Then steam again using the Steam setting, LOW, 4 minutes
    • Stove top (Total steaming time: 8 minutes + 2 minutes):
      • Bring water to a boil in a steamer / wok and place a trivet / steamer rack in it. Steam the stuffed tofu over MEDIUM LOW HEAT for 8 minutes.
      • After 8 minutes, decorate the meatballs with some rehydrated goji berries / wolfberries
      • Place the marinated shrimps on top of the stuffed tofu
      • Then cover the pot and continue steaming over MEDIUM LOW HEAT for 2 minutes
  9. Garnish with some coriander and serve immediately while it is hot
