Air Fryer Honey Miso Brinjal Eggplant Aubergine
Nowadays the air fryer makes it so convenient to prepare brinjal dishes. Not only we can cut down on the amount of oil used, we also have less cleaning up to do after cooking because the kitchen is less greasy. This is a nice savory dish to go with rice. Prep time: 20 minutes
Cooking time: 25 minutes
Serving: 1 to 2 (increase portions accordingly if you are cooking for more)
Ingredients:
- 2 small brinjals / eggplants / aubergines
- 1 red chili
- 1/2 teaspoon sesame seeds
- 1 tablespoon honey
- 1 tablespoon miso
- 5 tablespoons groundnut oil
- 1 small stalk of spring onions
Method:
- Sesame seeds: Toast in a dry pan over MEDIUM LOW heat until golden brown and aromatic
- Spring onions: Cut to about 6mm lengths
- Chili: Remove seeds and dice
- Honey-Miso paste mixture: Add honey and 2/3 of the diced chili to miso and stir to combine
- Brinjals:
- Cut in half length-wise and coat with groundnut oil
- Air fry the oil coated brinjals at 180°C for 15 minutes
- (8 minutes + 7 minutes = 15 minutes total time).
- Check after 8 minutes and brush on more groundnut oil
- Continue air frying for another 7 minutes
- After 15 minutes, the oil coated brinjals should be golden brown. Brush on the miso paste mixture and air fry at 200°C for 8 minutes until the miso mixture is well caramelized.
- Transfer brinjals onto a serving plate
- Garnish with diced chilies, spring onions and toasted sesame seeds
Notes:
If you do not have an air fryer, you can always use an oven to grill the brinjals or you can pan fry the brinjals on a stove top
