Pork Ribs Steamed with Bean Paste, Garlic & Cherry Tomatoes

This pork rib dish is almost similar to those Dim Sum version. The Dim Sum version is usually chopped into smaller pieces, and steamed with salted black beans without tomatoes. Adding tomatoes to this dish makes it a more wholesome meal. Great one-dish meal to go with a steaming bowl of white rice! This dish is easy to prepare. A little more time is needed to prepare the bean paste mixture, but once that is done, it's just marinate, wait and then steam! It takes about 15 minutes to prepare the bean paste, so best do it the night before, marinate the ribs and let it sit in the fridge overnight. Just pop into the steamer the next day and dinner is ready in less than an hour. SO EASY LAH! The recipe shown here feeds 1 - 2, just double up accordingly if you are cooking for more. So good with a steaming bowl of rice and a stir-fried vegetable dish!

Prep time: 15 minutes
Cooking time: 50 minutes
Serving: 1 - 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 300g pork ribs (6 x 2-inch pieces)
  • 8 cherry tomatoes
  • Coriander for garnishing
  • 1 teaspoon bean paste
  • 1 salted plum
  • 1/2 teaspoon groundnut oil
  • 2 tablespoons water
  • 4 pips garlic
  • 1/2 teaspoon corn flour
  • 1 tablespoon sugar
Method:
  1. Split cherry tomatoes into halves. Set aside. 
  2. Cut Thai chili into small pieces of about 4mm length. Set aside.
  3. Bean Paste & Garlic mixture:
    • Cut garlic into small pieces
    • Pit the salted plum and tear it up into small pieces
    • Blend or rough chop garlic, salted plum, bean paste, sugar and water to combine the ingredients
    • Add groundnut oil to the blended ingredients. Stir to combine.
    • Taste and flavor to your liking
  4. Coat pork ribs with corn flour and then marinate with half of the bean paste and garlic mixture. Set aside to marinate for at least 2 hours. Best if left to marinate overnight in the fridge. 
  5. Just before steaming the pork ribs, pour in the rest of the bean paste and garlic mixture. Arrange pork ribs on a plate. Scatter cherry tomato halves and Thai chili over the top. 
  6. Cooking time:
    • Panasonic Cubie: Cover pork ribs with a plate. Steam setting, HIGH, 30 minutes
    • Stove top: Bring water to a boil and steam pork ribs over MEDIUM HIGH HEAT for 30 minutes
  7. After 30 minutes, taste and flavor to your liking
  8. Pierce with a fork to check if the ribs are tender enough. If ribs are not tender yet, add another 10 to 15 minutes of steaming time. Pierce again with a fork to check if ribs are tender enough to your liking after 10 minutes. Repeat if necessary. 
  9. Garnish with coriander and serve immediately
