Crispy Deep Fried Golden Shallots

This is a popular condiment in most Asian kitchens. It's my favorite and I frequently use this as a garnish or as an extra ingredient to enhance the flavors for many dishes. Only 2 ingredients, so this is just SO EASY LAH! You can store the fried shallots in a clean airtight jar and it keeps well for a few weeks in your pantry. The crispy fried shallots is a convenient Asian way of adding flavor to our blanched veggies, noodles and dishes. The aromatic oil is also commonly used to drizzle over veggies and noodles. Preparation time is only about 5 minutes and cooking time takes another 15 minutes. The recipe shown here is for 2 portions, just double up accordingly if you are cooking for more. Sooooo good especially when it's freshly made. When I am making this, half will usually end up in my tummy before I even use it for anything. And it's so aromatic, the whole kitchen smells heavenly after making this!

Prep time: 5 minutes
Cooking time: 15 minutes Serving: 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 250ml (1 cup) groundnut oil
  • 3 - 4 shallots (peeled)
Method
  1. Peel and slice shallots thinly
  2. Pour groundnut oil into a pan
  3. When the oil is still at room temperature, add sliced shallots and deep fry over MEDIUM LOW heat. Stir occasionally.
  4. When the shallots starts turning golden brown, stir frequently
  5. When it smells really fragrant and the shallot is golden brown, remove from heat immediately
  6. Pour everything through a strainer to separate the shallots and oil. The shallots will continue to brown and get burnt if it's left in the hot oil.
  7. Spread out the fried shallots on a paper towel so that the excess oil is absorbed by the paper towel
  8. Once the fried shallots have cooled down, transfer it into an airtight jar
  9. The oil can be kept in a clean container
Notes:
  • I use the fried shallots to add flavor to many dishes - scatter over rice, sprinkle over blanched veggies, garnish steamed eggs
  • The shallot oil can be used to flavor noodles, cook rice, stir-fry veggies
