Braised Yee Mee (Mun Yee Min) Chinese Style Noodles | BIG Bites MY
Braised Yee Mee (Mun Yee Min) Noodles Easy-peasy noodle dinner that is ready in under 30 minutes! And noodles taste sooooo much better with pork lard! Without it, noodles taste so flat! Definitely worth the time spent slowly rendering the pork lard! But if you don't have time to spent making pork lard, you can either omit it or make it in advance and store it in your pantry - so it's always there when you need to use it! With preparation and cook time of about 20 minutes, this is really SO EASY LAH! The recipe shown here feeds one, just double up accordingly if you are cooking for more.

Ingredients:
- Batch A
- 1 piece Yee Mee (deep fried noodles)
- 1 small wedge cabbage
- 1 tablespoon chopped garlic
- 1/8 teaspoon white pepper
- 1/4 teaspoon light soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon dark soy sauce
- 1 small piece of pork fat
- 1 cup (240 ml) water
- Batch B:
- 100g lean pork slices
- 4-6 medium sized shrimps (shelled and deveined)
- 1/8 teaspoon white pepper
- 1 teaspoon light soy sauce
- 1/4 teaspoon oyster sauce
- 1/4 teaspoon corn flour
- Lean Pork Slices & Shrimps:
- To marinate pork slices and shrimps, add white pepper, soy sauce and oyster sauce in the ratio of 2/3 for pork and 1/3 for shrimps separately
- Additional ingredients for pork slices: Add corn flour
- Stir to combine and set aside to marinate separately
- Cabbage:
- Cut cabbage into strips (about 1 cm wide)
- Pork lard:
- Dice pork fat into 1 cm cubes
- In a dry pan, render pork lard out of the pork fat over MEDIUM HIGH heat
- Stir occasionally.
- When pork lard is golden and crispy, remove and drain excess oil
- Separate the oil and crispy pork lard. Set aside to be used later.
- Yee Mee noodles:
- Soak Yee Mee noodles with water for a few minutes until softened. Drain and set aside.
- Heat 1 tablespoon of pork lard over MEDIUM LOW heat
- Add chopped garlic and saute until fragrant
- Add marinated lean pork slices and saute for a while until lightly browned
- Add marinated shrimps and continue cooking until shrimps are about 80% cooked. Removed shrimps and set aside.
- Add cabbage
- Add light soy sauce, oyster sauce, white pepper and dark soy sauce. Stir to combine.
- Add 1 cup (240ml) water. Cover and braise until cabbage soften.
- When cabbage have softened, add Yee Mee noodles. Stir to combine.
- Add pre-cooked shrimps
- Cover and braise for another 1 - 2 minutes
- Scatter crispy pork lard on the top just before serving
