Sweet & Sour Pork (Kou Lou Yuk / Gu Lou Yuk)

Anything with tomato ketchup is always a favorite of mine. And this is also another favorite meal because for lazy people like me, it's a complete 1-dish meal - my protein and veggies chucked in and cooked together. SO EASY LAH! Preparation time is only about 15 minutes but I usually marinate the pork the night before so that it's tastier. Cooking time is about 25 minutes. The recipe shown here feeds 1, just double up accordingly if you are cooking for more. So yummy with a bowl of rice!

Prep time: 15 minutes
Cooking time: 25 minutes Serving: 1 (increase portions accordingly if you are cooking for more)

Ingredients:

  • Pork:
    • 150g pork cubes
    • 1 teaspoon oyster sauce
    • 1/8 teaspoon white pepper
    • 1/4 teaspoon soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon plum sauce
  • 3 tablespoons tomato ketchup
  • 2 pieces canned pineapple rings
  • 2 tablespoons canned pineapple syrup
  • 3 tablespoons tapioca starch
  • 1 tablespoon egg (beaten)
  • 1 large onion
  • 1/2 green capsicum
  • Oil for deep frying
Method
  1. Add white pepper, soy sauce and oyster sauce to pork. Mix well and marinate overnight. 
  2. Peel onion, cut into wedges and separate the layers
  3. De-seed green capsicum and cut into wedges
  4. Cut pineapple rings into small wedges
  5. Add 1 tablespoon beaten egg to marinated pork cubes. Stir to coat. 
  6. Add another 1 tablespoon of tapioca starch and stir again to combine. It should look like a thick batter. Add the rest of the tapioca starch if needed. 
  7. Heat oil over MEDIUM HIGH heat for deep frying. Dip a pair of chopsticks into the hot oil and if bubbles appear at the end of the chopsticks, it is hot enough to deep fry the pork.
  8. Deep fry pork, turning occasionally. When pork becomes golden brown, remove and drain off excess oil. 
  9. In a clean pan, heat up 1 tablespoon of oil over MEDIUM LOW heat
  10. Add onion (I added the core / inner layers first) and stir-fry until aromatic
  11. Add tomato ketchup, plum sauce, canned pineapple syrup and sugar. Stir to combine.
  12. Add green capsicum, pineapple rings and onion wedges
  13. Stir to combine
  14. Taste and flavor to your liking
  15. Serve immediately with a bowl of rice
Notes:
  • Aside from green capsicum, you may add cucumber and cherry tomatoes if you wish to have more greens in the dish
  • Canned pineapple can be replaced with canned lychees
