Ladies Fingers (Okra) with Sweet, Sour & Spicy Pickled Shallots | BIG Bites MY
A quick fix when I'm busy or on days when I'm feeling really
lazy.
With preparation and cook time of under 15 minutes, this is
really SO EASY LAH! The recipe shown here feeds one, just double up accordingly
if you are cooking for more.
Perfect with a bowl of hot rice and an omelette!

Prep time: 15 minutes
Cooking time: 5 minutes
Serving: 1 (increase portions accordingly if you are cooking for more)
Ingredients:
Part 1: Pickled Shallots
- 3 shallots
- 1 lime (juiced)
- 1/2 teaspoon fish sauce
- 1 tablespoon sugar
- 1 Thai chili
Part 2: Ladies Fingers (Okra)
- 8 ladies fingers (okra)
- 500ml water
- 1 tablespoon salt
- 1 teaspoon cooking oil
Method:
Part 1: Pickled Shallots
- Peel and slice shallots
- In a bowl, add lime juice, fish sauce and sugar. Stir until sugar dissolves.
- Add sliced shallots and Thai chili
- Mix well and set aside to pickle
Part 2: Ladies Fingers (Okra)
- Bring 500ml of water to boil
- Add salt and oil
- Blanch ladies fingers over medium low heat for 30 seconds. Remove.
- When ladies fingers are cool enough to handle, trim off both ends and split into halves
Part 3: Serving
- Arrange ladies fingers on a plate and spoon pickle shallots over them
- Ready to be served
