Chinese Seaweed and Egg Drop Soup with Pork Meatballs and
Tofu
I always have minced pork, tofu and eggs in my fridge. And there’s always a few pieces of Chinese seaweed discs in my pantry. So this a quick soupy meal to put together whenever I feel like having soup.
With preparation and cook time of under 20 minutes, this is really SO EASY LAH! The recipe shown here feeds one to two, just double up accordingly if you are cooking for more.
Rice will go nicely with a steaming bowl of hot
seaweed soup on cold, rainy nights!

Prep time: 10 minutes
Cooking time: 10 minutes
Serving: 1 to 2 (increase portions accordingly if you are cooking for
more)
Ingredients:
- Pork Meatballs
- 100g minced pork
- 1/8 teaspoon white pepper
- 1 teaspoon soy sauce
- 1 teaspoon corn flour
- 10g Chinese seaweed
- 1 piece tofu (your choice of either silken tofu or pressed tofu)
- 1 egg
- 1 teaspoon chicken stock granules
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1 tablespoon chopped garlic
- 1 tablespoon groundnut oil
- 500ml water
Method:
- Pork Meatballs
- Add white pepper, soy sauce and corn flour to minced pork and mix well to combine
- With clean hands, make marble-sized meatballs
- Whisk egg and set aside
- Cut tofu into little 1cm cubes and set aside
- Heat oil over MEDIUM LOW heat and saute garlic until aromatic
- Add water and bring to boil over MEDIUM LOW heat
- Add chicken stock granules and white pepper
- Add pork meatballs
- Add Chinese seaweed
- Add tofu cubes and bring to boil
- Taste and flavor to your liking. Please take note that seaweed is salty, so add salt to taste (I used 1/4 teaspoon of salt)
- Turn off heat and pour in beaten egg. Wait 10 seconds before gently stirring soup to make egg drop ribbons.
- Serve hot with a bowl of rice
Notes:
- With a block of tofu, you get 2 generous bowls of soup with this recipe. If you omit tofu, then it's a large bowl of soup for one.
