Chinese Green Spinach Soup with Pork Slices and Salted Egg
Green spinach (Green Amaranth) or bayam in our local Malay lingo is easily
available in Asia.
A simple, hearty bowl of soup that you can prepare in less
than 30 minutes, and you have a nutritious meal packed with veggie and protein.
The recipe shown here feeds one, just double up accordingly if you are cooking
for more. So easy LAH!

Cooking time: 10 minutes
Serving: 1 (increase portions accordingly if you are cooking for more)
Ingredients:
Part 1:
- 100g lean pork slices
- 1 teaspoon soy sauce
- 1 teaspoon corn flour
Part 2:
- 1 bunch spinach (Green Amaranth / Bayam)
- 500ml water
- 1 tablespoon cooking oil
- 1 teaspoon chicken stock
- 1 egg (beaten)
- 1/8 teaspoon salt
- 1 tablespoon chopped garlic
- 1 salted egg yolk
- 1 teaspoon goji berry / wolfberry (rinsed and drain)
- 5g dried anchovies (rinsed and drain)
Method:
Part 1:
- Add soy sauce and corn flour to lean pork slice. Mix well and set aside to marinate.
Part 2:
- Cut up salted egg yolk into small pieces
Part 3:
- Heat up oil and saute anchovies
- Add garlic and saute until fragrant
- Add water and bring to boil
- Add chicken stock granules and salt
- Add spinach
- Add marinated pork slices and bring to boil
- Add salted egg yolk
- Taste and flavor to your liking
- Turn off heat and pour in beaten egg

Add in goji berry / wolfberry and it's ready to be served
