Watercress and Soft Bone Pork Spare Ribs Chinese Slow Cooked Soup
For us Chinese, soup is always an important component of a meal. It takes hours to prepare, and it is nourishing and healthy. It is our comfort food. Nothing like some hot soup to start and end a meal! Preparation takes about 20 minutes. Cooking time is about 1.5 hours. It is even faster if you use a pressure cooker! SO EASY LAH! The recipe shown here feeds two to three; just double up accordingly if you are cooking for more. Ending my meal with a bowl of soup is always very comforting for me. It reminds me of childhood mealtimes.

Prep time: 20 minutes
Cooking time: 90 minutes
Serving: 2 to 3 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 200g watercress
  • 1 teaspoon salt
  • 12 red dates / jujube (rinsed) 
  • 1 small piece dried cuttlefish (rinsed)
  • 1 tablespoon goji berry / wolfberry (rinsed)
  • 1 piece pork stock cube
  • 2000ml water
  • Soft Bone Pork Spare Ribs
    • 200g soft bone pork spare ribs
    • 1 tablespoon corn flour
    • 1000ml water

Method:

  1. Watercress:
    • Separate the watercress leaves and stems
    • Rinse a few times to wash off any dirt and sand. Then soak the watercress for a while.
    • After rinsing the watercress stalks, tie them together with a piece of cooking twine
  2. Soft Bone Pork Spare Ribs:
    • Add corn flour to the pork ribs and rub it in thoroughly (to remove blood and impurities)
    • Rinse the pork ribs with water to remove the corn starch
    • Place the pork ribs into a saucepan with 1000ml of water and bring it to a boil over MEDIUM HIGH heat. Stir occasionally.
    • Let it boil over MEDIUM HIGH heat for 3 minutes. The scum and impurities from the pork ribs will float to the surface.
    • After 3 minutes, pour away the water and rinse the pork ribs to wash off the scum and impurities
  3. Bring 2000ml of water to a boil. Add the watercress stems into the boiling water. Add in the blanched pork ribs, dried cuttlefish, red dates and pork stock cube.
  4. Cover and boil over MEDIUM HIGH heat for 30 minutes
  5. After 30 minutes, remove the watercress stems. Add in the watercress leaves. Cover and boil for an hour over MEDIUM LOW heat.
  6. After an hour, add the goji berries. 
  7. Taste and flavor to your liking (Taste before adding salt because the dried cuttlefish and pork stock cube can be salty). I added 1 teaspoon of salt.
Note:
  • Always rinse the dried ingredients before cooking to wash off any dirt or sand. And in the case of the dried cuttlefish, to wash off any residue salt or saltwater so that it is less salty.
