Lotus Root, Groundnuts Peanut & Pork Ribs Soup (Pressure Cooker Version) We frequently had this soup during childhood. While stove-top slow-cooked soups are tastier, for busy people, pressure cooker soups are the next best thing. Fast, easy, and almost as tasty as the stove-top version. So my favorite soups are frequently making an appearance on my dinner table nowadays.  Preparation takes about 15 minutes. Cooking time using the pressure cooker takes about 40 minutes. Cooking the soup the conventional way over the stove-top will take about 2 to 2.5 hours. This is a really SO EASY LAH recipe! Just chuck everything into the pressure cooker, press the button, and wait for it to be ready! The recipe shown here feeds two; just double up accordingly if you are cooking for more. A bowl of hot soup with rice always makes a hearty, nutritious meal for me.

Prep time: 15 minutes
Cooking time: 40 minutes
Serving: 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 300g lotus root
  • 80g (1/2 cup) groundnuts
  • 1 piece pork stock cube
  • 8 dried red dates / jujube
  • 1/8 teaspoon salt
  • 1 small piece dried cuttlefish
  • 1000ml water
  • Pork Ribs
    • 1 tablespoon corn flour
    • 180g pork ribs
    • 500ml water

Method:

  1. Groundnuts / Peanuts:
    • Rinse groundnuts to wash off dirt and impurities. Drain and repeat.
    • Soak groundnuts in hot water and set aside to soak while preparing the other ingredients
    • Just before cooking the soup, remove the groundnuts from the hot water. If you wish to de-skin, it may be done now.
  2. Pork Ribs:
    • Add corn flour to the pork ribs and rub it in. Blood and impurities will stick to the corn flour.
    • Rinse the pork ribs with water to wash off the corn flour.
    • Place pork ribs in a pan and add 500ml of water. Bring it to a boil over MEDIUM LOW heat.
    • The scum and impurities will float to the top. Boil over MEDIUM LOW heat for 5 minutes. Stir occasionally.
    • After 5 minutes, pour away the water. Rinse pork ribs to wash off the scum and impurities.
  3. Lotus Root:
    • Peel and rinse the lotus root
    • Slice lotus root into circular discs about 8mm thick
  4. Place the ingredients in the pressure cooker: 
    • Groundnuts
    • Lotus root slices
    • The blanched pork ribs
    • Red dates / jujube - rinsed
    • Dried cuttlefish - rinsed
    • Pork stock cube
    • Water (1000ml) until the mark for maximum water level in my mini pressure cooker
  5. Pressure Cooker / Instant Pot:
    • Place the lid on the pressure cooker and turn to lock. I used the preset SOUP mode. (High pressure 30 minutes). 
  6. NATURAL RELEASE the pressure cooker after the soup is ready and then use the STIR-FRY preset mode
  7. Check if you are happy with the texture of the lotus root and groundnuts
  8. Taste and flavor to your liking. I added 1/8 teaspoon of salt.
  9. I let it boil for another 5 minutes using the STIR-FRY preset mode to intensify the flavor of the soup.
Note:
If you are cooking the soup over a STOVE TOP
  • Bring to a boil over MEDIUM HIGH heat. And then simmer for 2 hours over MEDIUM LOW heat until the groundnuts soften.
