Prawns Shrimps Steamed with "Gold and Silver" Garlic This is a perfect match both in flavor and texture. The "Gold" garlic is aromatic and crispy. The hot oil will mellow down the pungent taste of raw garlic so the "Silver" garlic is flavorful and soft. This is a tasty yet easy dish to prepare, especially for the festive season. The "Gold and Silver" garlic can be made a few days in advance, so there is less prep work during the festive season. SO EASY LAH! The recipe shown here feeds 1 to 2, so double up accordingly if you are cooking for more. This is always a crowd-pleaser. Perfect with hot rice.

Prep time: 30 minutes
Cooking time: 20 minutes
Serving: 1 to 2 (increase portions accordingly if you are cooking for more)

Ingredients:

  • 6 medium-sized prawns / shrimps
  • 3 tablespoons groundnut oil
  • 1 bulb garlic
  • 1 tablespoon Shao Xing wine
  • 1/4 teaspoon salt
  • 1 teaspoon oyster sauce
  • Spring onion curls for garnishing (Not in picture)

Method:

  • Prawns:
    • Trim off the sharp parts on the prawn head and tail. Trim off some of the whiskers and legs.
    • Cut open the shell along the spine of the prawn with a pair of scissors
    • Cut along the spine of the prawn with a knife to make a deep pocket. Remove the intestinal track.
  • Garlic:
    • Peel garlic and then mince it
    • To make the "GOLD" garlic: Pour groundnut oil into the pan and add half of the minced garlic. Stir occasionally over MEDIUM LOW heat.
    • Saute until the garlic is aromatic and golden brown
    • Remove from heat and add in the seasonings immediately: oyster sauce, salt and Shao Xing wine. Stir to combine.
    • The oil should have cooled down slightly after the addition of the seasonings. To make the "SILVER" garlic, add in the remaining minced garlic and stir to combine.
    • Taste and flavor to your liking
  • Arrange the prawns on a steaming plate
  • Fill the pockets along the spine of the prawns with the "GOLD and SILVER" garlic oil mixture and drizzle some over the prawns
  • Cooking time:
    • Panasonic Cubie: Steam setting, MEDIUM, 5 minutes
    • Stove top: Bring water to a boil in a steamer / wok and place a trivet / steamer rack in it. Steam prawns over MEDIUM HIGH HEAT for 3 minutes.
  • Garnish with some spring onion curls and serve immediately
Notes:
  • The “Gold and Silver” garlic can be made up to several days in advance if you are serving this dish during the festive season
  • Any remaining “Gold and Silver” garlic mixture can be used as a dipping sauce for poached chicken or as a condiment for noodles
  • The steaming time for the prawns / shrimps may differ depending on the size of the prawns and the quantity you have on the plate. So use your own judgement. You may need to steam a few more minutes. Prawns cook fast. If it has turned pink / orange, and is opaque and no longer translucent, it is usually cooked.
