Tomato Egg (Scrambled Eggs with Tomato)
This is always a quick and simple recipe that makes me happy
because of its vibrant happy colors. Tomato ketchup dishes always reminds me of
childhood.
With preparation and cook time of under 20 minutes, this is
really SO EASY LAH! The recipe shown here feeds one, just double up accordingly
if you are cooking for more.

Prep time: 10 minutes
Cooking time: 10 minutes
Serving: 1 (increase portions accordingly if you are cooking for more)
Ingredients:
- 15 cherry tomatoes
- 2 eggs
- A few stalks of spring onion
- 2 tablespoons groundnut oil
- 2 tablespoons tomato ketchup
- 2 tablespoons (30ml) water
- 1/8 teaspoon white pepper
- 1/8 teaspoon salt
- 1 tablespoon sugar
Method:
- Cut spring onion - separate the white and green parts
- Cut cherry tomatoes into halves
- Crack eggs into a bowl and whisk
- Heat 1 tablespoon of oil over MEDIUM LOW heat to scramble egg. When it's ready, remove from pan and set aside.
- Heat the remaining oil over MEDIUM LOW heat and saute the white parts of the spring onion until aromatic
- Add cherry tomatoes and saute for a few minutes until softened
- Add tomato ketchup, salt and white pepper. Stir to combine.
- Add 1 tablespoon (15ml) of water
- Add sugar and simmer for a while
- Taste and flavor to your liking
- Add scrambled eggs. Stir to combine.
- If it is a bit dry at this stage, add the remaining 1 tablespoon (15ml) of water
- Add the green parts of the spring onions. Reserve some for garnish.
- Mix well, plate up, garnish with spring onions and it's ready to be served
