Lemon Chicken (Honey Lemon Chicken) - Roasted Version
The eateries in Malaysia and Singapore usually serve their
Lemon Chicken battered, deep fried and covered in a lemony sauce.
I seldom deep fry at home, so I have roasted the chicken
instead and made a tangy lemon-honey sauce to go with it.
With preparation and cook time of about an hour, this is
really SO EASY LAH! The recipe shown here feeds one, just double up accordingly
if you are cooking for more.
So appetizing to have something sweet and sour
to eat with a bowl of rice.

Prep time: 30 minutes
Cooking time: 50 minutes
Serving: 1 (increase portions accordingly if you are cooking for more)
Ingredients:
Honey Roast Chicken
- 1 chicken thigh
- 1/2 teaspoon soy sauce
- 1 teaspoon oyster sauce
- 1/8 teaspoon white pepper powder
- 1 teaspoon honey (for brushing)
Lemon Sauce
- 1 lemon (zested and juiced)
- 2 tablespoons honey
- 1 tablespoon sugar
- 1 teaspoon cooking oil
- 1 tablespoon corn flour
- 60ml (4 tablespoons) water
Method:
- Honey Roast Chicken:
- Add soy sauce, oyster sauce and white pepper to chicken
- Marinate for at least 2 hours. Best overnight.
- Cooking time:
- Panasonic Cubie: Convection with preheat setting; 180°C for 35 to 40 minutes
- Oven (preheated): 180°C for 35 to 40 minutes
- Remove and brush with honey while it is still hot
- Lemon Sauce:
- Zest lemon. Grate only the top yellow layer. Avoid grating the white pith as it is bitter.
- Juice lemon
- Place lemon juice in a pan. Add honey and sugar.
- Simmer over low heat
- Add lemon zest
- Add 1 tablespoon of water to 1 tablespoon of corn flour to make a cornstarch slurry. Add cornstarch slurry bit by bit to thicken sauce.
- Lemon sauce is ready when you get the consistency you like
- To Serve:
- Spoon lemon sauce over roasted chicken and it is ready to be served
Notes:
- Lemon sauce made from 1 lemon is usually enough for 2 servings of chicken
- You may need to adjust the sugar level accordingly because sweetness level depends on how much juice you get from the lemon and how sour it is
