China Leeks Stir-Fried with Roast Pork and Tofu
This is an easy one-pot dish complete with protein and
veggies.
A bit more time is needed to deep fry the firm tofu and to
simmer the leeks to soften it, but it's time worth spending.
With preparation and cook time of under 40 minutes, this is
really SO EASY LAH! The recipe shown here feeds one, just double up accordingly
if you are cooking for more.
Lovely to eat with a bowl of rice.

Prep time: 10 minutes
Cooking time: 30 minutes
Serving: 1 - 2 (increase portions accordingly if you are cooking for more)
Ingredients:
- 2 stalks China leeks
- 150g roast pork
- 1 piece firm tofu
- 1 tablespoon cooking oil
- 1 tablespoon chopped garlic
- 1 tablespoon oyster sauce
- 1/2 teaspoon soy sauce
- 1/8 teaspoon white pepper
- 1 teaspoon corn flour
- 1 teaspoon Shao Xing wine
- 195ml (13 tablespoons) water
- Oil for deep frying
Method:
- Clean leeks well. It is usually coated with quite a lot of sand, so rinse the leeks throughly to wash off all the soil and sand. Then cut into bite-size pieces. Separate white and green parts.
- Cut tofu into small pieces
- Cut roast pork into bite-size pieces
- Heat oil until smoking hot over medium high heat. Add tofu and deep fried until golden. Remove and drain excess oil with a kitchen towel.
- Heat oil over medium high heat and add garlic. Saute until lightly browned and fragrant.
- Add white parts of leeks and saute until fragrant
- Add oyster sauce, soy sauce and white pepper
- Add 3 tablespoons of water and leeks simmer for a while
- Add another 3 tablespoons of water and continue simmering
- Add tofu and roast pork
- Add green parts of the leek. Add another 3 tablespoons of water and let it simmer for a few minutes.
- Add 3 more tablespoons of water and cook for a while more
- Add 1 tablespoon of water to 1 teaspoon of corn flour to make a cornstarch slurry. Add cornstarch slurry bit by bit to thicken sauce to the consistency you like.
- Taste and flavor to your liking and it's ready to be served
